A commercial tilt skillet, also known as a braising pan or tilting braiser, is one of the most versatile pieces of equipment you can put in a high-volume kitchen. What You Can Cook in a Tilt Skillet
The short answer is almost anything. Tilt skillets are commonly used for braising large batches of meat, simmering curry bases and gravies, making soups and stews in bulk, frying chicken or fish, cooking rice and pasta at volume, and holding finished dishes hot for service.
