Groen BPP-40GA 40 Gallon Tilt Skillet - Power Tilt, Stainless Clad Pan, Open Leg Base
Braising, searing and shallow poaching all happen in the one pan on the BPP-40GA, which works to 40 gallons. Steam is not part of the arrangement; the burners heat the plate directly, so the pan comes up to temperature without a boiler behind it. Sauteing, simmering and finishing all run in the same vessel, which is the point of the format.
A clad plate 5/8 in thick carries the heat across the whole floor of the pan rather than lifting it in one place. Underneath, welded fins spread the burner's heat into the plate, which is why a gas skillet of this build does not scorch along one line. Power tilt takes the effort out of a full pan; the switch has three positions and a manual override stands behind it. The pan is 10 Inch deep. Input is 144,000 BTU/hr, which is the figure the gas line is sized from.
Type 304 stainless, solid and one-piece welded, is what the pan body is made from. Inside, the liner is type 304 stainless over the clad plate. Groen offers Classic, Advanced and Cook2Temp control packages, which is a decision about how much of the cook is left to the operator. At sign-off it answers to CSA and NSF.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. The stand takes a faucet bracket on the right side, the left side or the right rear, which is decided by where the water already is. Beyond the gas line (natural gas or propane) the unit needs only 115 V single phase at 5 A (60 Hz) for its controls and ignition. Room in front matters more than room behind, since that is where the contents go.
