Groen BPM-40GSP 40 Gallon Tilt Skillet - Manual Tilt, Stainless Clad Pan, Open Leg Base
One pan on the BPM-40GSP stands in for a stock pot, a griddle and a braising oven at once, all of it at 40 gallons. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. It is bought for the batch that would otherwise be cooked three times over.
A clad plate 5/8 in thick carries the heat across the whole floor of the pan rather than lifting it in one place. On the gas build the clad plate carries welded heat transfer fins underneath, which is how the flame's heat is spread before it reaches the cooking floor. Tilting is by hand crank through a worm-and-gear mechanism, and the body comes fully vertical in 24 turns. Depth to the rim is 10 Inch. Groen rates the burner at 144,000 BTU/hr.
Type 304 stainless, solid and one-piece welded, is what the pan body is made from. The cooking surface itself is type 304 stainless clad plate, which takes a metal spatula without complaint. Three control packages are offered. Classic gives power and temperature, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe for cooking to an internal reading. Groen lists it to CSA and NSF.
Mounting is an open leg tubular stand on height-adjustable bullet feet, which leaves the floor underneath open to a mop. The stand carries a mounting bracket for a faucet, so filling and rinsing happen where the pan is. Two services are needed, the gas supply (natural gas or propane) and a 115 V single phase circuit at 5 A (60 Hz). The pour side has to stay clear, because a pan or a kettle sits under the lip when the body goes over.
