Groen BPM-40GC 40 Gallon Tilt Skillet - Manual Tilt, Stainless Clad Pan, Open Leg Base
Braising, searing and shallow poaching all happen in the one pan on the BPM-40GC, which works to 40 gallons. Steam is not part of the arrangement; the burners heat the plate directly, so the pan comes up to temperature without a boiler behind it. Sauteing, simmering and finishing all run in the same vessel, which is the point of the format.
A clad plate 5/8 in thick carries the heat across the whole floor of the pan rather than lifting it in one place. Underneath, welded fins spread the burner's heat into the plate, which is why a gas skillet of this build does not scorch along one line. Emptying is a crank job: the worm-and-gear drive holds the angle at any point, and 24 turns takes the body vertical. The pan is 10 Inch deep. Input is 144,000 BTU/hr, which is the figure the gas line is sized from.
Type 304 stainless, solid and one-piece welded, is what the pan body is made from. Inside, the liner is type 304 stainless over the clad plate. Three control packages are offered. Classic gives power and temperature, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe for cooking to an internal reading. At sign-off it answers to CSA and NSF.
It sits on open tubular legs with adjustable bullet feet, and the clear space beneath them is what keeps the area cleanable. The stand carries a mounting bracket for a faucet, so filling and rinsing happen where the pan is. Beyond the gas line (natural gas or propane) the unit needs only 115 V single phase at 5 A (60 Hz) for its controls and ignition. Leave the front open: a full tilt puts the lip out over whatever is standing there.
