At 30 gallons the BPM-30GA takes on production that a range top cannot carry in one vessel. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. It earns its floor space on the days the menu runs to one large braise rather than twenty portions.
Under the food sits 5/8 in of stainless clad plate, heavy enough to even out the hot spots before they reach a roux. Underneath, welded fins spread the burner's heat into the plate, which is why a gas skillet of this build does not scorch along one line. The body tilts on a manual crank driving a worm and gear, taking 24 turns to reach vertical. Pan depth is 10 Inch. Input is 104,000 BTU/hr, which is the figure the gas line is sized from.
The body is type 304 stainless in solid one-piece welded construction, so there is no internal seam for fond to lodge in. Type 304 stainless lines the pan, with the clad plate forming the cooking floor. Controls are specified with the order in three tiers: Classic with a power and temperature knob, Advanced adding a timer and an LED display, and Cook2Temp adding a core probe. At sign-off it answers to CSA and NSF.
It sits on open tubular legs with adjustable bullet feet, and the clear space beneath them is what keeps the area cleanable. A bracket for faucet mounting is part of the stand, which puts the fill point at the pan instead of across the aisle. It is built for natural gas or propane (select the gas type above), and the only other service is 115 V single phase at 5 A (60 Hz). The pour side has to stay clear, because a pan or a kettle sits under the lip when the body goes over.
