Groen BPM-30GSP 30 Gallon Tilt Skillet - Manual Tilt, Stainless Clad Pan, Open Leg Base
Braising, searing and shallow poaching all happen in the one pan on the BPM-30GSP, which works to 30 gallons. Steam is not part of the arrangement; the burners heat the plate directly, so the pan comes up to temperature without a boiler behind it. Where it pays for itself is the day the menu turns on one large braise instead of forty plated portions.
Under the food sits 5/8 in of stainless clad plate, heavy enough to even out the hot spots before they reach a roux. Welded heat transfer fins run under the plate, taking the burner's heat sideways instead of letting it arrive in one place. The body tilts on a manual crank driving a worm and gear, taking 24 turns to reach vertical. The pan is 10 Inch deep. Groen rates the burner at 104,000 BTU/hr.
The body is type 304 stainless in solid one-piece welded construction, so there is no internal seam for fond to lodge in. Type 304 stainless lines the pan, with the clad plate forming the cooking floor. Three control packages are offered. Classic gives power and temperature, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe for cooking to an internal reading. The listings on the sheet are CSA and NSF.
Mounting is an open leg tubular stand on height-adjustable bullet feet, which leaves the floor underneath open to a mop. The stand carries a mounting bracket for a faucet, so filling and rinsing happen where the pan is. It is built for natural gas or propane (select the gas type above), and the only other service is 115 V single phase at 5 A (60 Hz). Leave the front open: a full tilt puts the lip out over whatever is standing there.
