Groen BPP-40GC 40 Gallon Tilt Skillet - Power Tilt, Stainless Clad Pan, Open Leg Base
One pan on the BPP-40GC stands in for a stock pot, a griddle and a braising oven at once, all of it at 40 gallons. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. It takes the pots off the range and the sheet pans out of the oven at the same time.
The cooking surface is 5/8 in of stainless clad plate, and that thickness is what spreads the heat instead of concentrating it under the burner. Underneath, welded fins spread the burner's heat into the plate, which is why a gas skillet of this build does not scorch along one line. The body is driven over by a motor on a 3-position control switch, and a manual override is fitted behind it. Groen states the pan depth at 10 Inch. Input is 144,000 BTU/hr, which is the figure the gas line is sized from.
Type 304 stainless, solid and one-piece welded, is what the pan body is made from. Type 304 stainless lines the pan, with the clad plate forming the cooking floor. Groen offers Classic, Advanced and Cook2Temp control packages, which is a decision about how much of the cook is left to the operator. At sign-off it answers to CSA and NSF.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. Faucet mounting is bracketed for right-side, left-side or right-rear position, so the fill point follows the plumbing rather than the other way round. Beyond the gas line (natural gas or propane) the unit needs only 115 V single phase at 5 A (60 Hz) for its controls and ignition. Leave the front open: a full tilt puts the lip out over whatever is standing there.
