Groen BPP-30EA 30 Gallon Tilt Skillet - Power Tilt, Stainless Clad Pan, Open Leg Base
Braising, searing and shallow poaching all happen in the one pan on the BPP-30EA, which works to 30 gallons. Steam is not part of the arrangement; electric elements heat the plate directly, so the pan comes up to temperature without a boiler behind it. Where it pays for itself is the day the menu turns on one large braise instead of forty plated portions.
Under the food sits 5/8 in of stainless clad plate, heavy enough to even out the hot spots before they reach a roux. Flat bar elements sit against the underside of the plate, and that arrangement is what keeps the floor of the pan at one temperature. The body is driven over by a motor on a 3-position control switch, and a manual override is fitted behind it. Groen states the pan depth at 10 Inch, and that depth is what lets a full load braise rather than fry.
Construction is heavy-duty type 304 stainless, welded into one piece rather than assembled, which is what makes cleaning a wash-down. Inside, the liner is type 304 stainless over the clad plate. Controls are specified with the order in three tiers: Classic with a power and temperature knob, Advanced adding a timer and an LED display, and Cook2Temp adding a core probe. Mounting is an open leg tubular stand on height-adjustable bullet feet, which leaves the floor underneath open to a mop. Faucet mounting is bracketed for right-side, left-side or right-rear position, so the fill point follows the plumbing rather than the other way round. It is offered for 208 V or 240 V, three phase service; choose the electrical option above. Leave the front open: a full tilt puts the lip out over whatever is standing there.
