Groen BPM-40GA 40 Gallon Tilt Skillet - Manual Tilt, Stainless Clad Pan, Open Leg Base
Groen builds the BPM-40GA as a 40-gallon tilting skillet standing on an open leg tubular frame. Steam is not part of the arrangement; the burners heat the plate directly, so the pan comes up to temperature without a boiler behind it. Sauteing, simmering and finishing all run in the same vessel, which is the point of the format.
The cooking surface is 5/8 in of stainless clad plate, and that thickness is what spreads the heat instead of concentrating it under the burner. Welded heat transfer fins run under the plate, taking the burner's heat sideways instead of letting it arrive in one place. The body tilts on a manual crank driving a worm and gear, taking 24 turns to reach vertical. The pan is 10 Inch deep. The burner is rated at 144,000 BTU/hr.
Construction is heavy-duty type 304 stainless, welded into one piece rather than assembled, which is what makes cleaning a wash-down. The cooking surface itself is type 304 stainless clad plate, which takes a metal spatula without complaint. Three control packages are offered. Classic gives power and temperature, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe for cooking to an internal reading. It carries CSA and NSF listings.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. A bracket for faucet mounting is part of the stand, which puts the fill point at the pan instead of across the aisle. Beyond the gas line (natural gas or propane) the unit needs only 115 V single phase at 5 A (60 Hz) for its controls and ignition. Leave the front open: a full tilt puts the lip out over whatever is standing there.
