The crank tilt is the first thing that separates the BPM-15GA from the rest of the range, and the pan behind it holds 15 gallons. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. Where it pays for itself is the day the menu turns on one large braise instead of forty plated portions.
The cooking surface is 5/8 in of stainless clad plate, and that thickness is what spreads the heat instead of concentrating it under the burner. On the gas build the clad plate carries welded heat transfer fins underneath, which is how the flame's heat is spread before it reaches the cooking floor. A worm-and-gear crank does the tilting, which means the pour stops wherever the handle stops; 24 turns brings the body upright. Pan depth is 8 Inch. Input is 65,000 BTU/hr, which is the figure the gas line is sized from.
Construction is heavy-duty type 304 stainless, welded into one piece rather than assembled, which is what makes cleaning a wash-down. Inside, the liner is type 304 stainless over the clad plate. Three control packages are offered. Classic gives power and temperature, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe for cooking to an internal reading. Groen lists it to CSA and NSF.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. The stand carries a mounting bracket for a faucet, so filling and rinsing happen where the pan is. The electrical side is small: 115 V single phase drawing 5 A (60 Hz), alongside the gas connection (natural gas or propane). The pour side has to stay clear, because a pan or a kettle sits under the lip when the body goes over.
