Groen BPP-30GA 30 Gallon Tilt Skillet - Power Tilt, Stainless Clad Pan, Open Leg Base
Power tilt is the first thing that separates the BPP-30GA from the rest of the range, and the pan behind it holds 30 gallons. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. Where it pays for itself is the day the menu turns on one large braise instead of forty plated portions.
The cooking surface is 5/8 in of stainless clad plate, and that thickness is what spreads the heat instead of concentrating it under the burner. On the gas build the clad plate carries welded heat transfer fins underneath, which is how the flame's heat is spread before it reaches the cooking floor. A 3-position switch runs the power tilt, and the manual override means a full pan is never stranded at an angle. Pan depth is 10 Inch. Input is 104,000 BTU/hr, which is the figure the gas line is sized from.
The body is type 304 stainless in solid one-piece welded construction, so there is no internal seam for fond to lodge in. Inside, the liner is type 304 stainless over the clad plate. Groen offers Classic, Advanced and Cook2Temp control packages, which is a decision about how much of the cook is left to the operator. Groen lists it to CSA and NSF.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. Faucet mounting is bracketed for right-side, left-side or right-rear position, so the fill point follows the plumbing rather than the other way round. The electrical side is small: 115 V single phase drawing 5 A (60 Hz), alongside the gas connection (natural gas or propane). The pour side has to stay clear, because a pan or a kettle sits under the lip when the body goes over.
