Groen BPP-40EA 40 Gallon Tilt Skillet - Power Tilt, Stainless Clad Pan, Open Leg Base
One pan on the BPP-40EA stands in for a stock pot, a griddle and a braising oven at once, all of it at 40 gallons. Heating is by electric elements, which keeps the utility list short and the recovery quick. It is bought for the batch that would otherwise be cooked three times over.
A clad plate 5/8 in thick carries the heat across the whole floor of the pan rather than lifting it in one place. Flat bar electric heating elements are fitted to the underside of the clad plate, so the heat is laid across the floor as a pattern rather than a point. Tilting is motorized, worked from a 3-position switch, with a manual override kept for the times the power is off. At 10 Inch of pan depth there is room for stock over the top of a full load.
Construction is heavy-duty type 304 stainless, welded into one piece rather than assembled, which is what makes cleaning a wash-down. Type 304 stainless lines the pan, with the clad plate forming the cooking floor. Groen offers Classic, Advanced and Cook2Temp control packages, which is a decision about how much of the cook is left to the operator. At sign-off it answers to UL, cUL and NSF.
Mounting is an open leg tubular stand on height-adjustable bullet feet, which leaves the floor underneath open to a mop. Faucet mounting is bracketed for right-side, left-side or right-rear position, so the fill point follows the plumbing rather than the other way round. It is offered for 208 V or 240 V, three phase service; choose the electrical option above. The pour side has to stay clear, because a pan or a kettle sits under the lip when the body goes over.
