Groen BPM-30GC 30 Gallon Tilt Skillet - Manual Tilt, Stainless Clad Pan, Open Leg Base
Groen builds the BPM-30GC as a 30-gallon tilting skillet standing on an open leg tubular frame. Heating is by natural gas or propane, which keeps the utility list short and the recovery quick. It takes the pots off the range and the sheet pans out of the oven at the same time.
Under the food sits 5/8 in of stainless clad plate, heavy enough to even out the hot spots before they reach a roux. On the gas build the clad plate carries welded heat transfer fins underneath, which is how the flame's heat is spread before it reaches the cooking floor. Tilting is by hand crank through a worm-and-gear mechanism, and the body comes fully vertical in 24 turns. Depth to the rim is 10 Inch. Input is 104,000 BTU/hr, which is the figure the gas line is sized from.
Construction is heavy-duty type 304 stainless, welded into one piece rather than assembled, which is what makes cleaning a wash-down. Inside, the liner is type 304 stainless over the clad plate. Groen offers Classic, Advanced and Cook2Temp control packages, which is a decision about how much of the cook is left to the operator. At sign-off it answers to CSA and NSF.
The unit stands on an open leg tubular frame with height-adjustable bullet feet, so it levels on a floor that is not. A bracket for faucet mounting is part of the stand, which puts the fill point at the pan instead of across the aisle. Beyond the gas line (natural gas or propane) the unit needs only 115 V single phase at 5 A (60 Hz) for its controls and ignition. Room in front matters more than room behind, since that is where the contents go.
