Seven and a half inches lands between the bread round and the lunch round, which is why it reads as an appetizer or starter course: enough surface for a crab cake and garnish, or three or four pieces of charcuterie, without the plate looking empty.
The half-inch body gives it a little more heft than the smaller VS-106, so it sits steady under a knife. Kitchens also use this diameter for a shared-plate menu where several land on a table at once. Fully glazed chinaware with a magnesia body takes a warming drawer and a dish machine in the same shift, and the case runs to three dozen.
