The surface runs 81 square inches — more than a 10 inch round offers — so protein, starch and vegetable separate cleanly without the cover looking crowded. At 3/4 inch of height it holds temperature through a pass from the window to a far table. The corners give a chef four natural points to drive a sauce line or a garnish toward, which a circle simply will not do. Cases drop to twenty-four here because the pieces carry more weight; two of them cover a forty-eight seat service with nothing held in reserve.
