A 10-1/2 inch round with a 1-1/4 inch wall and a well that takes five ounces. Depth like that is unusual on a dessert plate and it is there to catch sauce: a plated tart with creme anglaise, a poached pear in syrup, an affogato that drips.

Pastry sections want a wide face with a shallow well because it gives room to work around the centre, with a quenelle set off to one side, a line of coulis, a tuile standing up. Melamine holds a chilled surface at temperature for a few minutes, which helps with ice cream service. Cases are 24 pieces, two dozen.
