A twelve inch dinner plate carries a little under a third more surface than the ten and a half inch round in the same pattern, and the wall steps up by a quarter inch to an inch and a quarter. Kitchens reach for the wider round where a plate gets composed rather than filled: a whole fish laid out straight, a chop flanked by two garnishes, or a small centre with open space held deliberately around it.

Check the wash rack before standardising on it, because a round of this span needs an oversize slot. On a laid table it sets the cover apart from the surrounding settings, which is why banquet operations keep a dozen back for head tables. Twelve to a case.
