At fifteen and a half by seven and a half inches this is the long end of Shanghai's rectangular run, a buffet-scale rectangular platter for a carving station, a bread service or a dessert line. Two inches of extra length over the SH-213 reads as considerably more on a table because the width grows with it, taking the usable field past a hundred square inches.

A kitchen typically keeps four or six of these and rotates them, which is why Yanco packs twelve rather than twenty-four. Laid across the corner of a buffet table it leaves room for a second server alongside without the two overlapping.
