Twelve ounces is a single souffle that rises properly, and this bowl gives it the two things that requires: a straight fluted wall for the batter to climb, and a four and a half inch floor wide enough that the centre cooks through before the crown sets. Two and a quarter inches of depth leaves room for the lift.

That is more capacity than any RK condiment size in this pattern carries, and the difference in purpose follows from it. Those hold a portion; the SF-112 cooks one. French onion soup under a cheese cap, a chocolate souffle, a cassoulet for one, a bread pudding baked and served without transferring it. The flutes do real work in the oven, stiffening the wall against thermal shock and giving a rising batter a vertical grip. Two dozen to a case, rated for oven, microwave and dishwasher.
