Twelve inches of coupe round, rising an inch and an eighth at the edge. At this diameter a plate stops being a cover and becomes a canvas: a chef can set three components apart from one another with clear white between them, which is how modern plating reads at the pass.

It also works as a shared round in the middle of a table, holding a flatbread or a charcuterie spread for two. The absence of a rim means the eye goes to the food rather than to a border.
