The black nine-and-three-quarter-inch deep tray is the individual-service member of Rome's walled rectangles. Five and seven eighths wide, two and a half inches deep, it takes a marinated salad, a braise portion or a syrup-heavy dessert for one person, and the dark interior hides the oil film that shows in a pale well.

Why the colour matters on a wet piece

Sauces and dressings leave a ring as they drop, and on black that line disappears between courses. The same mould exists in white for rooms that want the food to carry the contrast instead. Two dozen come in the case, and the walls are thick enough that a stack of them does not splay on a shelf.
