The fourteen-inch flat pizza plate is the share-size board of the run, a full inch of body with a level face from edge to edge. It carries a pie meant for a table rather than a person, and it doubles as a passing round when a kitchen has run its oval servers out.

An inch of porcelain is a heat reservoir: pulled from a warmer, it keeps the underside of a crust from going soft while a table works through the slices.
