A single-ounce rectangle is a soy dish, a wasabi rest, a pill of chutney beside a curry, a dab of aioli next to fries. Restaurants lose them steadily, which is why they come four dozen at a time. The square corners mean a row of them lines up tidily along the edge of a sushi plate instead of rolling about.
