Seven and a quarter inches is a dessert plate with room to compose on: a slice of cake with a sauce pool and a scoop beside it, rather than a single wedge filling the surface. The 5/8-inch depth is marginally deeper than the smaller Nessico rounds, enough of a lip to keep a sauce from running off the edge.

Green is specified where a pastry station runs separately from the hot line and wants its own ware. Because this plate goes out at the end of service, it tends to come back stacked wet into a bus tub; melamine takes that without the edge chips that make a china dessert plate unusable after a season.
