A wide deep plate — eleven and a half inches of surface, two and three quarter inches of wall, sixteen ounces to the brim. It is a plate that works where a flat one cannot, because the wall is tall enough to hold a sauce while the surface stays open. In black the generous surface works as a frame: a scoop of sorbet, a fruit compote or a white sauce gains a hard outline instead of bleeding into the background.
