Two wells of two ounces each in a dish five and three quarter inches long, three wide and an inch and a quarter deep. The divider runs the short way across, so a diner gets soy on one side and wasabi or ginger on the other with no chance of the two running together. For a sushi or dumpling service that would otherwise send out a pair of separate dishes, this halves the pieces on the table and the pieces in the wash.

A white interior keeps both wells legible from a distance, so a server crossing the floor can see which side has been worked and which has not. The shallow inch-and-a-quarter well lets a thin sauce spread rather than bank up, which suits dipping with a flat edge. Melamine also takes the repeated knock of chopsticks on the centre wall, which is the part thin porcelain tends to lose early in its life.
