Ten ounces in a square four and a half inches across and two deep. Squared hollowware earns its keep on tray service: the sides meet their neighbours cleanly, and a set-down lands flat rather than rocking on a curve. Two inches of depth is shallow enough to drink from over the rim, which is how miso is taken at many Japanese counters.

Dark melamine forgives the salt bloom and the thin oil film that settle at a broth bowl's waterline; on a black surface neither shows. Brown on the outside softens the silhouette so the bowl reads as glazed stoneware instead of plastic. Run through a dish pit several hundred times a week, a melamine square keeps its corners where a ceramic one surrenders them.
