Thirteen inches long but just three and a half wide, the NA-414 is a narrow sushi plate — the same length as the NA-413 with a little over two inches of width taken out. That makes it a strip, and a strip is what a straight run of nigiri or a row of amuse bites wants.

A strip rather than a field

There is almost no empty surface here: the food is the arrangement. Six pieces set end to end fill it, which is how a chef wants a nigiri course presented. An inch of height around the edge keeps soy contained in a channel this narrow. It also serves well as a condiment and chopstick line beside a main course.
