The MO-808 is the narrow pan plate: 14-1/2" long, 6-1/2" across and an inch deep, with a moulded handle running off one end. The long, slim field was designed for food arranged in a line, so it takes a row of skewers, a sliced baguette, three tapas plated in sequence, or a whole fillet without cutting it down.

The handle is the working part. A server can lift it one-handed off a pass and set it in the middle of a table without reaching across a diner, which is the manoeuvre a flat rectangle makes awkward. Matte white melamine keeps the carrying weight low and takes the knocks that a long piece collects on a busy service line.
