The MO-108 takes the Moderne triangle out to 8" x 6-1/2" and lifts the rim to three-quarters of an inch, which is the point at which a dressed salad stays put instead of sliding. That makes it the working salad and starter size in the range, broad enough for a composed plate of leaves, grains and a protein garnish without the arrangement spilling past the edge.

The extra width over the 6" piece also suits a dessert with a sauce streak or a trio of small bites presented in a line along the long side. In matte white melamine it photographs cleanly for menu shots and will not chip at the corners the way a thin porcelain triangle does when it meets a bus tub.
