The diameter plates a single protein with two sides without the empty border a larger round leaves, which keeps portions looking right on a shorter menu. Three quarters of an inch of depth is flat enough to stack deep and shallow enough that sauce stays where it is put. Where a kitchen runs both this and the 9-1/2 inch size, the difference of half an inch reads clearly in service, so the two should not be mixed on the same pass.
