A softened triangle, four and three-quarter inches on its long side, five ounces to the brim. The sauce dish is as much a mise-en-place piece as a service one: filled in a batch at the top of a shift, covered, and pulled one at a time as tickets land.

The triangular plan pays off on a tray. Three of them turn to fill a corner where three circles would leave holes between them, so a passed tray carries more dips in the same area. Stacked, the sauce dish columns tightly and the case of thirty-six goes into the walk-in as one compact block, already filled and wrapped.
