Three-quarters of an inch deep and six and a half across, the saucer is the piece that decides how quickly a coffee station turns over. A column of them sits flat beside the cups, and a server lifts one off the top one-handed while the other hand is already on the pot.

Because the well is shallow and the underside is plain, these saucers stack dead square with no rocking, which is what a bussing tub needs when a whole column goes back to the dish pit in a single lift. In the machine they lie face-up in one flat layer and come out dry, no peg rack required.
