A nine-inch rim soup plate holding ten ounces: a wide flange of rim with the bowl sunk inside it, which is the classic shape for a soup that is eaten with a spoon at a laid cover rather than drunk from a cup.

The rim does the work. It gives a server somewhere to take hold of a hot plate, it keeps a slopped spoonful off the cloth, and it leaves a border for a swirl of cream or a scatter of herbs that a straight-sided bowl has nowhere to put.
