Ten inches square and flat-faced, this is the entree plate of Fuji's square flat family. Ten inches is the width at which a square still belongs in front of one diner rather than down the middle of the table: it carries a protein, a starch and a vegetable at normal restaurant portions without the food running to the corners, and the right angles give a chef four clean quadrants to build on.

It is the middle step between the 8-inch FU-308 and the 12-inch FU-312. Two dozen to the case suits the reality that mains move faster than starters. The flat face and minimal rim make it easy to wipe clean at the pass and easy to stack high without the chipping that a rolled edge invites.
