Sushi service is the job this rectangle was cut for: 13-1/2 inches of length against 6-1/2 inches of depth gives a server almost exactly two rows of nigiri with a clear margin at each end for ginger and wasabi. The low rim is barely raised, so chopsticks can lift each portion off the surface without catching, and the long axis lets a chef lay out a progression that a diner reads left to right.
Among Fuji's rectangular sushi pieces it is the longest, running two inches beyond the 11-1/2 inch FU-212 and sitting an inch deeper front to back. That matters for omakase counters that plate several courses on one board. Despite the length, it stays per-diner tableware rather than a passing server, which is why it is named and shelved as a plate.
