Yanco DC-6114W Deli Melamine 14" x 9-1/2" x 2" Scallop Edged Display Tray, White — Case of 6

Salad bars run on separation and identification, and a white tray with a two inch wall does both: shredded carrot, corn, beetroot and bean each keep their own colour, and none of them climbs out when the tongs go in. A 14 by 9-1/2 inch floor takes useful depth without the bottom layer compressing.

That wall also makes it a sensible holding vessel behind the line, since a filled piece can go from prep to the bar with no transfer. White shows when something needs washing, which on a wet station is information worth having at a glance.
