Five inches across and an inch and a half high, taking 8 ounces — the shallow bowl in Black Pearl's 3000 run, which Yanco calls a salad bowl. The wide, low profile is the giveaway: a dressed salad needs room to be tossed and seen, not depth to be contained.

Half an inch more span than the rice bowl and two-thirds of an inch less height gives a very different vessel for a similar volume. Leaves sit loosely rather than compressing, and a fork can get under them. It also works as a side for pickles, a fruit portion, or a dessert with a sauce. Forty-eight to a case. Melamine in matte black, break-resistant, and shallow enough to stack tightly so a prep line can keep forty within reach.
