The compact end of the three square dishes in Black Pearl, 3-1/2" across with a 1" well that takes 4 ounces. Square geometry gives it more floor than a round ramekin of the same span, so pickles, kimchi, olives or a nut mix sit in a single layer instead of piling up.

At this size the dish works as a side rather than a course. Set two on a 10" square plate and you have a tasting arrangement; set one under a skewer and it catches the drip. The 1" depth is shallow enough to scoop from with chopsticks and deep enough to hold a wet garnish. Break-resistant melamine with a matte black surface means it goes straight from the dish machine back to the pass, and it stacks with its 4-1/2" and 5-1/2" siblings in the same column.
