A quarter-inch wider than its grey sibling at nine and a quarter inches, the clay-and-black BM-710CL keeps the same ten-ounce capacity and the same raised inch-and-seven-eighths edge. Clay is the right ground for dessert: caramel, chocolate, poached fruit and pastry all sit better on a warm tone than on grey.

The raised edge

That edge is the whole design. It holds a sauce where it is poured, stops a quenelle sliding on the way to the table, and gives a server something to grip when the plate comes off a cold shelf. Pastry sections tend to standardise on one colour here and garnish for contrast instead.
