Eighteen inches changes how a platter is handled — two hands, always, and a clear path to the table. The AC-27 gives a carving station a full round to work with, deep enough at 1-3/4 inches to keep juices contained and wide enough that a whole bird does not crowd the garnish.

Two to a case is deliberate. Platters this size ship in pairs because a carton of more would not survive the trip, and a kitchen that needs eighteen-inch rounds generally needs a pair of them, not a dozen. Hand washing is the sensible habit; many commercial racks will not take the diameter.
