The Visvardis DG16VPAIR is a pair of side doors for the DG16V Turbo Gyros gas machine. Sized for the taller DG16V chamber, these doors enclose the broiler zone on both sides to improve heat retention and reduce the thermal variation across the vertical height of the meat cone. In a machine with 16 burners and the capacity to cook 101–200 lb of gyros meat, consistent heat distribution from top to bottom of the cone is critical to achieving even cooking without overdone sections at the hotter burner positions. The DG16VPAIR side doors reduce heat escape from the side of the broiler, helping maintain more even temperatures throughout the cone. Stainless steel construction. Sold as a pair.
