Unox SPEED.Pro™ 3-Tray Electric Speed Oven (XASR-03HS) - 208/240V, 3-Phase or 1-Phase, Ventless
SPEED.Pro™ is a convection oven and a speed oven in one compact unit. In Bake mode it turns out three half-sheet trays of pastry, even from frozen; in Speed mode it toasts and heats sandwiches, flatbreads and single portions in seconds rather than minutes. This electric model holds 3 half-size 18" x 13" sheet pans on 2-15/16" spacing and runs from 86°F to 500°F.
It is built for coffee shops, bakery-cafés, convenience stores and bars that bake in the morning and serve hot food to order all day.
What you will notice in day-to-day use
- Bakes like a convection oven. Bake mode handles up to three 18" x 13" trays of pastry or bread, fresh or frozen, with even color from tray to tray.
- Speed mode for made-to-order. Speed mode combines hot air, microwaves (SPEED.Plus) and the contact-heated SPEED.Plate to toast and heat sandwiches and single portions in record time.
- Hundreds of programs, ready to go. 384 Bake and 384 Speed programs, 24 quick buttons, and CHEFUNOX / SPEEDUNOX libraries that set everything for you.
- No hood for most menus. Intertek-approved for ventless operation (EPA 202 / UL 710B) for everything except fatty raw proteins such as raw chicken, bacon, sausage or steak. For those, check your local HVAC code.
- Connected. Built-in Wi-Fi with HACCP and program download/upload, plus the Data Driven Cooking app.
Choosing your setup
Voltage: 3-phase is the usual choice in restaurants and hotels and draws fewer amps per leg; 1-phase is there for sites without 3-phase service, such as many cafés, shops and bakeries. Output and amp draw for each version are in the table below. Ask your electrician which service you have before ordering.
