Unox EVEREO® 900 Hot Fridge Food Holding Cabinet (XAEC-1013) - 10 Full-Size Hotel Pans, 208/240V
EVEREO® is something new for the kitchen: a hot fridge. Instead of chilling food and reheating it later, it keeps cooked dishes at serving temperature, controlling both temperature and atmosphere, so plates go out the moment an order comes in. This model holds 10 full-size (12" x 20") hotel pans and plugs into a standard 208/240V single-phase outlet.
The EVEREO® 900 is the narrow model for spaces short on width; two stacked units can hold up to about 240 portions in less than 11 sq ft.
What you will notice in day-to-day use
- Food at serving temperature, for days. Cook, seal in MULTI.Day bags or trays, and EVEREO® keeps it ready to plate for up to 72 hours. In SUPERHOLDING mode it holds food in open or unsealed containers for up to 8 hours.
- Plates go out in minutes. With food already at serving temperature there is no reheat step, so a dish can leave the pass about as fast as you can garnish it.
- Less waste, calmer prep. Cook bigger batches when the kitchen is quiet, serve portion by portion as orders arrive, and stop throwing away food that was chilled and reheated once too often.
- Precise control. A 9.5" touchscreen manages temperature and atmosphere, up to a maximum of 158°F, with a food load of up to 110 lb.
Choosing your setup
Door hinge: a Left Hinge door swings open to the right; a Right Hinge door swings open to the left. Pick the one that opens away from your prep side or the wall so the door never blocks the cook.
