Made from 18/8 grade 304 stainless steel at true 24 gauge thickness, it seals tightly over the two-thirds size hotel pan — a larger, deep-capacity pan commonly used in commercial kitchens for bulk holding of proteins, stews, pastas, and soups. The two-thirds size is a versatile alternative when a full size pan is too large and a half size is too small for the application.
