The Somerset CDR-2100M is a 20" two-stage side-operated dough roller with metallic rolls, ideal for dry, stiffer, cracker-style doughs and fondant. Its double-pass design produces thinner, more uniform dough sheets than a single-pass sheeter, at 500–600 pieces per hour. Removable spring-loaded scrapers, automatic shutoff sensors, and compact stainless steel construction make it one of the most reliable rollers in commercial bakery and pizzeria kitchens.
