Shawarma, doner and gyro are only as good as the cone they come off, and the Serv-Ware SWVB-3 is built to roast one evenly from first slice to last. It is a three-burner gas vertical broiler sized for restaurants, food counters and caterers adding kebab or shawarma to the menu, or running it as a steady seller all day.

The SWVB-3 uses 3 individually controlled infrared burners rated up to 9,500 BTU each on natural gas, for 28,500 BTU/hr in total (24,000 BTU/hr on LP). It carries up to 65 lb of meat on a 21" spit, and a 120V motor turns the spit at 4 RPM from a standard NEMA 5-15P outlet.

What you will notice in day-to-day use

• Cook the cone the way you want it. Each of the 3 burners has its own control, so you can turn down the top or bottom when the cone tapers or the line slows.
• Distance you can dial in. The gap between the spit and the burners adjusts, letting you sear the outside hard for a busy lunch or back off for slower, even roasting.
• Lights when you need it. A continuous pilot keeps the main burners ready to fire instantly.
• Drippings handled. A stainless steel oil collector catches fat as the cone turns, which keeps the counter cleaner, while stainless heat shields on both sides keep heat on the meat.
