Small buffet, big flavor: the Serv-Ware SWGST-2 is a two-well gas steam table that keeps rice and beans, gravy and mashed potatoes, or two curries hot and ready to plate. It is a good fit for taquerias, small diners, cafeterias and catering kitchens that want reliable hot holding without running a dedicated electrical circuit.
2 wells, each heated by its own 3,100 BTU burner, add up to 6,200 BTU/hr in total. The wells are 8" deep to take 6" deep food pans, and the spec sheet lists a temperature range of 200°F to 500°F.
What you will notice in day-to-day use
- Two wells, two menus. Each well has its own burner and control valve, so you can hold a sauce gently in one and a starch hotter in the other.
- Deep wells for real batches. 8" deep wells take 6" deep food pans, holding more product between refills.
- Lights easily. A standing stainless pilot keeps the burners ready to light at the start of service.
- Prep and plate in one spot. A 7" wide full-length polyethylene cutting board runs across the front for portioning and plating.
Choosing your setup
Gas type: the SWGST-2 is available built for natural gas or for LP; choose the gas your kitchen uses above. The burner rating is the same on both; only the supply pressure differs.
| Gas | Total input | Manifold pressure |
|---|---|---|
| Natural gas | 6,200 BTU/hr | 4" W.C. |
| LP | 6,200 BTU/hr | 10" W.C. |
