Serv-Ware SC1836HPI Insulated Full Height Heater Proofer Cabinet, 36 Pan Capacity, Clear Door, 120V

The Serv-Ware SC1836HPI is the insulated version of Serv-Ware's full-height heater proofer, built for kitchens that run it hard all day. Bakeries, pizzerias, hotels and caterers can proof dough first thing, then switch over to hold plated or pan food hot through service.

Proof mode adjusts humidity anywhere from 30% to 100% at up to 115°F, while heat mode offers 9 settings up to 185°F. Thirty-six pan slides take full-size 18" x 26" sheet pans. It runs on 1,440 watts and a 15-amp dedicated circuit, and ships with a cord and NEMA 5-15P plug.

What you will notice in day-to-day use

• Holds heat better. The insulated cabinet, magnetic door seal and tight-fitting gasket keep heat and humidity where they belong, so recovery after loading is quicker.
• Proof with control. Adjustable humidity from 30% to 100% lets you dial in the right environment for breads, rolls and pizza dough.
• Hold hot food, too. Nine heat settings up to 185°F make it a handy holding cabinet for ready-to-serve dishes.
• Easy to read and service. The LED display and controls sit on a removable bottom drawer, and the clear polycarbonate door lifts off for cleaning.
• Moves where you need it. It ships with casters, two of them braking, so you can roll it between prep and service areas.
