Serv-Ware PM30-PTO 30 Qt. Planetary Dough Mixer, 3-Speed, 2 HP, Gear Driven, 120V
Pizzerias, bakeries and busy scratch kitchens that have outgrown a 20-quart bowl will find the Serv-Ware PM30-PTO a comfortable next step. This 30-quart planetary mixer is gear driven from top to bottom, so it keeps its pull when the dough gets stiff, and it plugs into an ordinary 120V outlet.
A 2 HP motor turns the agitator at three set speeds: 91, 166 and 282 RPM. The bowl takes up to about 16.5 lb of flour, or roughly 25 lb of finished dough, and the mixer draws 12.5 amps at 120V/60Hz on a NEMA 5-15P plug. A dough hook, flat beater and wire whip come in the box.
What you will notice in day-to-day use
- Torque where it counts. A high-torque gear transmission with heat-treated, hardened steel alloy gears and shafts handles heavy pizza and bread doughs without slipping.
- Three speeds for every job. Use the low speed for kneading, the middle for batters and fillings, and the top speed with the whip for creams and meringues.
- Hands free with the timer. Set the manual timer and get on with prep instead of standing over the bowl.
- Safety built in. The interlocked stainless steel bowl guard and bowl lift stop the mixer when opened, and thermal overload protection guards the motor.
- Low upkeep. The transmission is permanently lubricated and the body is rigid cast iron, so there is little to service day to day.
- Room to grow. The industry standard #12 attachment hub accepts compatible accessories for extra prep tasks.

Before it arrives
